It's been a few years since I canned raw-packed chicken. They look a bit of a mess (see below), and are a hassle to clean the empty chairs because of all the fats and goo. But they're tastier and easier to shred than other types of canned chicken.
I bought a three pack of chicken thighs at Costco, and decided to can it all. It ended up making six pints (filled them with the raw chicken, no salt, and left 1 1/4" headspace. I did add about 1/2 cup water to each jar, and then canned them at 10 pounds of pressure for 75 minutes.
We are hoping to use these for chicken stews (green chili enchilada stew, yum) and to drain it and add fajita spices and use them for quesadillas.
Glad to have these on the shelf! Now I'm on to making more space in our very full freezers.
