It's now early July, and the garden harvests are starting! I did a huge harvest/pruning of the basil growing in the green stalk this week, as seen in the photo below.
I still have a ton of basil from last summer, and have already dried about half of a half-quart jar, so I decided it was time to make basil. I grated some parmesan cheese (from my Costco block) on a hand grater, and put the basil and olive oil in the food processor, and when that was finally chopped and a good liquid (adding more olive oil as needed), I added in the cheese, and blended it until combined.
When I'm ready to eat the basil, I will toast some pine nuts, add more cheese, pasta and cherry tomatoes. Yum! The tastes of summer.
